Funnel Cake

Chef Jason Hill of http://www.CookingSessions.com shares his best funnel cake recipe in this episode of “Chef Tips.”

Inspired by the funnel cakes found at Country Bakery in the LA Farmers Market, these Pennsylvania Dutch recipes are a favorite at county fairs.

But do you need a funnel to make funnel cake? Actually, these days, it’s much easier to use a pastry bag. You can also just pour it from a pitcher into the oil.

This funnel cake recipe calls for 3 cups all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon salt and 1/4 cup sugar. Next, stir in 2 cups of milk and 3 beaten eggs. Your funnel cake batter is ready.

There’s no need to buy a special funnel cake fryer to make funnel cake. All you need is a 6-inch cast iron pan. Heat 2 cups of canola oil to about 350 degrees.

If you don’t have a frying thermometer, you can tell if the oil is ready with a wooden spoon. Just place it in the hot oil and if a lot of bubbles form around the edge, your oil is hot enough for frying. You can also flick some water or a bread cube in the oil. If it sizzles immediately, the oil is ready.

When you’re oil is hot, drizzle 1/2 cup of the funnel cake mix into the hot oil, making a circular crosswise pattern. Let it set about 2-3 minutes, or until it looks nice and golden brown underneath. Flip it over and cook the other side, then remove with a slotted metal spoon or metal tongs onto a paper towel or wire rack.

Cover with sifted powdered sugar, fresh whipped cream and the fresh-cut fruit or jam of your choice. Enjoy this easy funnel cakes recipe.

Persian New Year Recipes from Bria Tavakoli

- Bria Tavakoli , a Good Day viewer and yoga instructor from West Harlem, is sharing some recipes from her repertoire in honor of Persian New Year. The first recipe is Kuku Sabzi (Iranian Herbed Omelet). The bonus recipe is Khoresht Fesenjaan (Persian Pomegranate Walnut Chicken).

The eggs symbolize in this dish signify fertility and rebirth/new beginnings. The green colors symbolize spring. Though traditionally served for Persian New Year, this dish is popular year round. You can buy the herbs for this dish in their dried form from Middle Eastern stores. Some stores have a specific Kuku Sabzi mix of herbs available. Fresh herbs can also be used.

Kuku Sabzi: Iranian Herbed Omelet

4-5 eggs
1 medium onion
2 garlic cloves
1 tablespoon flour
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon saffron, dissolved in 1 tablespoon water
1/4 teaspoon turmeric
2 cups mixed dry herbs (scallions, dill, mint, chives, coriander, parsley, fenugreek); if using fresh herbs, use 6 cups chopped fresh herbs
1/4 cup butter or ghee (clarified butter)
Fresh parsley, to garnish (optional)

1. If using the oven, preheat it to 350 F.

2. Soak the dried herbs for 15 minutes in lukewarm water. Use the soaking time to prep the other ingredients. As the herbs soak, chop the onion finely, mince the garlic into small pieces, and gather the other ingredients.

3. Beat the eggs until they are light and fluffy, then blend in the onion, flour, salt and pepper, saffron (if using), turmeric and herbs.

4. In a cast-iron pan or shallow casserole dish, melt the butter and tilt the pan to distribute it evenly over the entire surface. Pour in the egg-herb mixture, cover, put in the oven and bake for 30 to 45 minutes, until the kuku is crispy on top and brown on the bottom. For stovetop cooking, cook over medium heat for 3 minutes, then turn the heat down to low and continue to cook for another 20 minutes, or until the eggs are well browned. Cut the kuku into segments, turn each segment over, and return to the heat for another 10 minutes, or until the other side has browned.

5. Serve hot or at room temperature, garnished with chopped parsley.

Roasted Potatoes

Roasted potatoes are a great side dish to any meal and they are so easy to make.

Chef Jason Hill shows you how to make a great roasted potato recipe.

Garlic Roasted Potatoes

The recipe calls for a few fresh thyme sprigs (or fresh rosemary)
10 baby gold potatoes
10 baby red potatoes
3 tablespoons extra virgin olive oil
1 teaspoon garlic-shallot puree (or 2 cloves crushed garlic)
1 tablespoon sea salt
Fresh cracked pepper

Whisk the olive oil, garlic and thyme in a mixing bowl. Next slice the potatoes in half. Add to the bowl and mix well with a rubber spatula so they are completed coated. Stir in the salt and fresh cracked pepper. Coat well.

Preheat oven to 375 F. Add to a cast iron pan or casserole dish. Roast 45 minutes to 1 hour.

After 30 minutes, turn the potatoes over. After 1 hour, the outside should be crunchy with a tender inside.

If you can’t find the petite baby potatoes, any variety of potato will work. Thanks for watching!

Salmon – Simple Sautéed Salmon Recipe

In this simple salmon recipe, Rita shows you how to sauté salmon filets in a cast iron skillet and finish them in the oven. Great for a crowd, an easy recipe like this salmon recipe make quick work of your time in the kitchen.

Simple ingredients that you can adapt are a great part of this salmon recipe. A bit of seasoning, lemon and the option of lemon grass round out this dish.
